Carne Ammuddicato (Breaded Italian Steak)

  • Beef or Pork, tenderized
  • Bread crumbs
  • Garlic powder
  • Parmesan or Romano Cheese
  • Olive oil
  • Eggs
  • Parsley
  • Basil (optional)
  • Salt & pepper (to taste)
  1. You can use any cut of beef or pork but, it will need to be tenderized. The amount of ingredients will vary depending on the amount of meat you are using. Combine bread crumbs, cheese, garlic powder, parsley, basil, and salt & pepper. Mix thoroughly. Beat eggs in a bowl. Dip pieces of meat in egg and then cover completely with bread crumb mixture. Fry in olive oil.


Jasper Mirabile's Sicilian Sfincione

  • 1 26-ounce pizza dough
  • 2 tablespoon olive oil
  • 1-1/2 cup Jasper’s “Eatsa Pizza” Pizza Sauce
  • 5-6 anchovies cut in 6 pieces
  • ½ cup caramelized minced onions
  • 1 cup grated Romano Cheese
  • 1 link Sicilian fennel sausage
  • Toasted breadcrumbs for dusting
  1. Place olive oil in a large square pan. Spread all around. Add dough and work towards edges. Place anchovies in dough, spreading evenly. Cover with a kitchen towel and let proof a minimum one hour. Preheat oven to 400 degrees. Place pizza sauce to the top of the dough along with minced onions, add grated Romano along with raw sausage to the top. Dust with breadcrumbs. Place in oven and bake until crust is golden and sauce is bubbly on top. Cool and cut in squares.
